soul fuel bars

Sometimes the best recipes aren't born in a perfectly organized kitchen. They're born on the days when you're tired, trying to eat something nourishing, and just need a snack that actually keeps you going.

That was the goal behind these bars.

I wanted something simple.

No baking. No complicated ingredients. No protein powder that tastes like chalk. No snack that leaves me hungry twenty minutes later.

After a little experimenting, these Soul Fuel Bars became exactly what I was hoping for — rich, chocolatey, satisfying, and made with ingredients I already keep in my pantry.

The best part? They come together in just a few minutes, live happily in the freezer, and make busy mornings feel just a little less chaotic.

Whether I'm heading to work, recovering after yoga, or just trying to avoid the afternoon vending machine temptation, these bars have become one of my favorite meal-prep staples.

instructions

  1. Line a 9×9-inch baking dish with unbleached parchment paper.
  2. In a large mixing bowl, stir together all ingredients until evenly combined.
  3. Transfer the mixture into the prepared pan.
  4. Using the back of a measuring cup — or clean hands — press the mixture firmly into an even layer.
  5. Place another sheet of parchment paper over the top and press firmly one more time. This extra step helps the bars hold together beautifully after freezing.
  6. Freeze for one hour.
  7. Lift the bars out using the parchment paper and slice into squares or rectangles.

Enjoy immediately or store for later.

One thing I've learned on my healing journey is that nourishing ourselves doesn't have to be expensive, complicated, or perfect. Sometimes self-care looks like preparing a meal that makes tomorrow a little easier.

Whether you're packing lunches, feeding your family, or simply trying to make healthier choices one meal at a time, I hope these bars bring a little comfort — and a lot of fuel — to your week.
