honey harvest chicken salad

A wholesome, high-protein chicken salad with crisp apples, crunchy celery, and a touch of honey for the perfect balance of sweet and savory.

Your kitchen doesn't have to be filled with expensive ingredients to create something delicious. Sometimes the best recipes come from opening the pantry, grabbing what you have on hand, and trusting your taste buds.

That's exactly how this Honey Harvest Chicken Salad came to life.

I wanted something nourishing, satisfying, and packed with protein — but it felt like it was missing something. After a little experimenting, I stirred in a teaspoon of honey and a splash of apple cider vinegar. Suddenly everything came together. The apples tasted brighter, the herbs came alive, and the savory chicken was perfectly balanced with just a hint of sweetness.

This has quickly become one of those recipes I'll keep on repeat for lunches, quick dinners, or busy meal prep days.

Why You'll Love This Recipe

  • Naturally sweetened with honey
  • High in protein
  • Crisp apples in every bite
  • Meal prep friendly
  • Made with everyday ingredients
  • Ready in about 10 minutes

Instructions

  1. Drain the canned chicken thoroughly and place it into a medium mixing bowl.
  2. Add the diced apple, celery, onion, and garlic.
  3. Stir in the mayonnaise, honey, and apple cider vinegar until everything is evenly coated.
  4. Season with thyme, turmeric, garlic powder, onion powder, sea salt, and black pepper.
  5. Taste and adjust the seasoning if needed. Don't be afraid to add another pinch of salt or an extra splash of apple cider vinegar if you'd like a brighter flavor.
  6. Refrigerate for at least 30 minutes before serving to allow the flavors to blend together.

Ways to Enjoy

This chicken salad is incredibly versatile. Serve it:

  • On toasted sourdough
  • On buttery croissants
  • In lettuce wraps
  • With crackers
  • Stuffed into tomatoes
  • On top of mixed greens
  • Straight from the container (no judgment here!)

Meal Prep Tips

Store in an airtight container in the refrigerator for 3–4 days. In fact, I think it tastes even better the next day once all of the flavors have had time to mingle.

Why Your Body Will Love This

Every recipe I share on Heart Body Spirit is about finding simple ways to nourish ourselves without overcomplicating healthy eating.

Chicken — An excellent source of protein to help keep you full and support muscle health.

Apples — Provide fiber and natural sweetness while adding refreshing crunch.

Celery & Onion — Add texture, freshness, and flavor with very few calories.

Turmeric — Contains naturally occurring antioxidant compounds and gives this salad its beautiful golden color.

Honey — Adds just enough sweetness to balance the savory ingredients without overpowering them.

Recipe Notes

  • A Gala apple gives the perfect balance of sweetness and crunch, but Honeycrisp also works beautifully.
  • If you prefer a creamier salad, simply add another tablespoon of mayonnaise.
  • For even more texture, try adding sunflower seeds or chopped pecans (if allergies aren't a concern for your household).

One thing I've learned on my healing journey is that nourishing ourselves doesn't have to be expensive, complicated, or perfect. Sometimes self-care looks like preparing a meal that makes tomorrow a little easier.

Whether you're packing lunches, feeding your family, or simply trying to make healthier choices one meal at a time, I hope this recipe brings a little comfort to your table.

Nourish well. Live fully.
