A high-protein, vegetable-forward dinner inspired by a happy kitchen accident.

Some of my favorite recipes have started with a plan that completely fell apart.

This one was supposed to be a crispy chicken pancake. I had watched a recipe online and was convinced I could recreate it. Instead, somewhere between the cutting board and the skillet, my "pancake" turned into beautifully caramelized bites of ginger chicken.

I could have called it a failure.

Instead, I looked down into the pan and realized it smelled incredible.

So I leaned into it.

The result is this Crispy Ginger Chicken Crunch Bowl — a simple meal with crisp cabbage, savory ginger chicken, fresh scallions, and cool cucumber slices. It's affordable, packed with flavor, and exactly the kind of dinner I find myself craving on busy weeknights.

why i created this recipe

When I cook for myself, I'm usually trying to accomplish several things at once.

I want meals that are:

  • High in protein
  • Rich in vegetables
  • Lower in added sugar
  • Relatively lower in carbohydrates than many takeout meals
  • Full of ingredients that offer fiber, vitamins, minerals, and naturally occurring antioxidants
  • Easy enough to make after a long day

Living with PCOS has changed how I think about food.

I no longer chase perfection or restrictive diets. Instead, I try to build meals around protein, colorful vegetables, healthy fats, herbs, and spices that make nourishing food something I actually look forward to eating.

This bowl reflects that philosophy.

While no single recipe can treat PCOS or cure inflammation, choosing meals made with minimally processed ingredients, plenty of vegetables, and satisfying protein can be one small part of supporting overall health.

Food isn't medicine.

But it can absolutely be an act of self-care.

why these ingredients?

Instead of relying on bottled dressings filled with refined sugar, I use 100% pure maple syrup.

It only takes a teaspoon to soften the sharpness of the rice vinegar while adding a subtle natural sweetness. I personally choose pure, non-GMO maple syrup because I prefer keeping my ingredient list simple.

The cabbage slaw provides:

  • Fiber
  • Vitamin C
  • Naturally occurring antioxidants
  • A satisfying crunch that makes every bite interesting

Chicken thighs stay incredibly juicy while offering protein that keeps this meal filling.

Fresh garlic, ginger, and scallions contribute layers of flavor without needing heavy sauces or excess sugar.

The Fly By Jing Sweet & Spicy Chili Crisp brings just enough heat to slowly build with every bite rather than overwhelming the dish.

ingredients

Crispy Ginger Chicken

  • 2 boneless, skinless chicken thighs, diced into bite-sized cubes
  • ½ teaspoon gluten-free measure-for-measure flour
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried onion flakes
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 teaspoon minced garlic (jarlic)
  • 1–2 teaspoons Fly By Jing Sweet & Spicy Chili Crisp
  • 1 tablespoon extra virgin olive oil

Crunchy Maple Slaw

  • 2 cups coleslaw mix
  • 1 tablespoon rice vinegar
  • 1 teaspoon pure maple syrup
  • 1 teaspoon coconut aminos
  • 1 teaspoon minced garlic (jarlic)
  • Pinch of sea salt
  • Black pepper, to taste

To Finish

  • 2–3 scallions, thinly sliced
  • Fresh cucumber slices

instructions

Marinate the Chicken

In a medium bowl, combine the diced chicken with the gluten-free flour, ginger, garlic powder, onion powder, onion flakes, sea salt, pepper, jarlic, and Fly By Jing Sweet & Spicy Chili Crisp.

Mix until every piece is evenly coated and let it rest for about 10 minutes while you prepare the slaw.

Prepare the Slaw

Add the coleslaw mix to a large bowl.

Pour in the rice vinegar, maple syrup, coconut aminos, jarlic, sea salt, and black pepper.

Toss everything together until the cabbage is lightly coated, then let it sit for about 10 minutes. This softens the cabbage just enough while keeping its fresh crunch.

Cook the Chicken

Heat the olive oil in a large skillet over medium-high heat.

Spread the chicken into a single layer and allow it to cook undisturbed for about 4–5 minutes until the underside develops a deep golden crust.

Flip the chicken and continue cooking for another 5–7 minutes, stirring occasionally, until fully cooked and caramelized around the edges.

Assemble

Divide the crunchy maple slaw between two bowls.

Top the cabbage mixture with the crispy ginger chicken and finish with plenty of freshly sliced scallions.

Serve with fresh cucumber slices.

The cool cucumber helps balance the gentle, slow-building warmth from the Fly By Jing Sweet & Spicy Chili Crisp and adds another refreshing layer of crunch.

This recipe comfortably serves two, or enjoy one serving now and save the second for an easy lunch the next day.

One of the unexpected gifts of healing has been learning to let go of perfection.

Years ago, I probably would have scrapped this recipe because it didn't turn out the way I intended.

Today, I know better.

Sometimes the recipe becomes something even better than the original idea.

Sometimes we do, too.

Whether it's a meal, a relationship, a career, or healing itself, life rarely follows the exact recipe we imagined.

That doesn't mean it's ruined.

Sometimes it simply becomes its own beautiful thing.

So if your chicken pancake falls apart…
